Start Simple, Go Green

My wife and I sing a song when we start to get hungry while kayaking or hiking.  It goes, “Guacamole, guacamole, and flax seed chips.”  The vision of this snack is what helps us make it to the end…

And it’s a consistent crowd pleaser.  You may think it’s ridiculously easy.  It is.

All you need are avocados, limes, and salt.  That’s it.  Ready to use avocados give slightly when squeezed and will give you a wonderfully creamy texture.

Cut the avocado in half, remove pit, and scoop the flesh into a bowl.

Add fresh lime juice – I use about 3/4 of a lime for two medium avocados.  Mash with any mashing tool you want – fork, spoon, fingers – I have a cool little avocado masher.

Work it to the consistency you like – leave chunks or not, it’s up to you.

Add salt to taste.  Pour, mix, taste, repeat.

Remember that you CAN’T remove salt so start light and add more as necessary.

This recipe is so simple, you won’t believe it.  And it beats store-bought guac with two chips tied behind it’s back.  Some people like to add garlic, chopped onions, or chopped tomato.

Feel free but I think simple is better.

Sometimes leftovers are just as good as the first time around. I had leftover pancakes for breakfast this morning. Warmed in the toaster with a little peanut butter and jam. Great emergency breakfast because we were practically out of milk.

Sometimes you gotta cook with what’s left.

Nope, not Crock Pot kind. This stuff seems to take more time than I thought. And I’m busy with other things too but this is going to cook!

Welcome to Everyman’s Kitchen!

We’re here to show regular guys that we can cook too.  We, guys, can handle cooking something more complicated than opening a can of sauce or dropping a bratwurst on the BBQ.

We’ll have recipes soon and videos as well.  For now, take comfort in the fact that we’re coming.  And when we arrive, you’ll be cooking!
